raw strawberry cheesecake 2.0

A few weeks ago I posted a “recipe” (more like an ingredients list) on a raw strawberry cheesecake. Since then I’ve been adjusting the recipe and ingredients a bit. Sometimes a recipe is good. But with a few adjustments it gets even better! In this new IMPROVED “recipe” I’ve removed the agave syrup completely and only used dates as a sweetener. I try to avoid most “syrups” (agave, rice syrup etc) these days as I feel they’re quite unnecessary and they should be consumed in very moderate quantities. HAHA this cake should also be consumed in very moderate quantities but yadda yadda. It’s so good! Make it and then invite some friends over. Here it is - Raw Strawberry Cheesecake 2.0;

Crust: Almonds, Dates, Cinnamon, Sea salt

Filling: Cashews, Coconut oil, Lime zest and juice, Strawberries, Vanilla, Dates, Sea Salt

(No measurements. You KNOW what to do!) GO A HEAD AND MAKE IT YA’LL!! :D

Raw Coconut Cookies

Here’s a recipe to all of you coconut lovers out there. These cookies are best served from the freezer and are really “crumbly” just like a cookie should be! But the best part is that they are easy to make and have a wonderful buttery and coconutty-flavor to them. What are you waiting for? MAKE THESE! All you need is;

(Makes about 18-20 cookies)

- 200 grams of dry shredded coconut 

- 100 grams of dry shredded coconut (yes MORE shredded coconut!)

- 100 grams of almond flour

- 1 cup of coconut oil 

- Seeds of one vanilla bean

- 0,5 cup light agave

- 1 tsp salt

In a bowl: Mix 100 grams of shredded coconut with the almond flour. Set aside.

In a high speed blender: Pulse 250 grams of shredded coconut into a “coconut flour”. When it’s done you add the coconut oil, vanilla bean, the agave and the salt. Mix it again until you have a creamy texture (Oh, the SMELL! Coconut and vanilla. Yum yums!). 

Back to the bowl: Pour your “coconut cream” over the shredded coconut and almond flour and stir until you have a dough that holds together but isn’t too “loose” or too wet. If it is add more shredded coconut. Make small round cookies from the dough and put in the freezer until they’re firm and ready to be…..EATEN!

Stars and bars from Canada

Photobucket Let me tell you about Char. She is my foodie friend from Canada and she ALWAYS know what you want to eat before you even know it yourself. Check out her inspiring blog and see for yourself! Don’t you just want to eat everything she makes??

Yeah you do.

Anyways we did a little food swap last week and I got the chance to try her amazing “Char Stars" which are fudgy, chewy, chocolaty "cookie" stars. They come in a variety of flavors but the base is always almonds and dates. She uses about 70% raw ingredients and they’re totally free from sugar, dairy, gluten and all of that!

Mmmm, sooo good! I’m sad they’re gone now. But also glad that Char is making some business with the stars. It should be everyones right to taste them! Thank you so much again Char!!

Raw Lemon & Strawberry Cheesecake

Crust: Walnuts & Dates (+ cinnamon if you like)

Cheesecake filling: Cashews & Coconut oil & Lemon & Real Vanilla & Agave & Pinch of salt

Strawberry layer: Strawberries & Agave

All I have to say is YO YO MA! This is even better than “real” cheesecake. A real treat! It’s kind of heavy but the lemon and strawberries makes it fresh. OH. This cheesecake is my new best friend! TRY IT!! (Sorry for no measurements - I encourage you to experiment for yourself! Or google..haha!) :))

1. Apple slices with almond butter, cinnamon and cardamon (APPLE CAKE!), Smoothie with banana, blackberries, spirulina, ginger and almond mylk. Lemon and nettle tea and a grapefruit!

2. Raspberry Kombucha <3. Green tea with guarana. Smoothie with banana, raspberries, nettle, acai, maca and almond mylk. Quinoa and Chia porridge with apple, hemp seeds, goji berries, cinnamon and almond butter!

3. Breakfast in the sun! (FINALLY!) Grapefruit juice and a veggie sandwich.

Raw Fruit Leathers - Recipe!

Fruit leathers is a great (no, the BEST) thing to make when you have a lot of ripe bananas at home. This is a recipe with only two ingredients. Bananas + Berries = Candy!

BANANA & BLUEBERRY FRUIT LEATHER CANDY - Recipe for one/two trays - 

- 6 very ripe bananas

- 1 cup frozen blueberries (or other berry of your choice)

Mix everything smooth in a high speed blender. Then spread it out evenly on a teflex paper. Dehydrate at 105° for about 8 hours. The fruit leather should be very pliable, not too dry and not wet when it’s done. You should be able to separate it from the teflex paper quite easily. Cut the fruit leather into stripes with a scissor. Then roll them up and cut them into whatever shape you like. Easy as 123 and ABC and all of that! (And so goood!) xx

Kombucha Love

As you may or may not know I have a severe Kombucha addiction. Kombucha is something I NEED every day. A day is not complete without Kombucha! Haha. True story. I really want to buy myself a kombucha baby to feed. Anyone who has any experience with that?

HEY! Hope you all had a nice and relaxing weekend/easter! I sure had. Been hanging out with family, friends and two ADORABLE kittens. Just look at Harry in the picture!! HOW CUTE? He was pretty depressed though because he’d injured his foot and couldn’t be outside in the sunny weather playing with his sister Harriet. NAAW!

Easter special - Eggs in a nest!

Looking for something fun, cute and sweet to make for easter? Look no further! Last week I teamed up with the raw dessert goddess Karolina from Love Raw. We did a little recipe collaboration were I made these raw chocolate bird’s nest cookies and Karolina made the white chocolate eggs to go with them. Eggs in a nest! AND IT’S OK TO EAT THE WHOLE THING! And trust me. You want to! Read Karolinas post for recipe —-> HERE! Ps. They’re completely nut free! *thumbs up*

Raw Chocolate Easter Eggs

Made these raw chocolate eggs with a (raw) marzipan filling at work today. They were quite an ambitious project I tell you. These were the steps:

1. Make raw chocolate from scratch

2. Make raw marzipan from scratch

3. Pour chocolate into egg moulds

4. Add marzipan layer

5. Finish off with one more layer of chocolate

6. *Fridge time*

7. Get the eggs out of the mould without breaking them

8. *Nervous breakdown time*

9. Pick out the best looking eggs

10. Wrap them up 

AAAAAH! These eggs were a TEST on my patience. They were so tricky to get PERFECT! Always a little bruise somewhere. But they tasted good and I guess it’s the inside that counts right? Even when it comes to chocolate? I’m making new ones tomorrow though. Practice, practice! What kind of easter treats are you making?

nut free cherry & hemp brownies

So, just posting some brownie-porn for you! I’m selling these at the café and they’re real and they’re spectacular (Seinfeld quote). AND they’re completely nut free because frankly, sometimes I get so tired of all the heavy nuts that are constantly used in raw foods. Don’t you?? Although, love nuts <3 But in moderation! 

The ingredients; hemp seeds (not shelled), sunflower seeds, chia seeds, raw cacao, vanilla, dates, dried cherries, a little drizzle of the old agave and a pinch of salt. 

Love this recipe!

1. A picture of yesterdays breakfast. Made a new batch of raw buckwheat granola earlier this week and went a LITTLE crazy and put a so much stuff in there; hemp seeds, coconut flakes, maca root, acai, mesquite, raspberries, apples, dates (and date paste as a sweetener), raisins, cinnamon, vanilla…Think that was it?! Ate it with some almond milk and it was super yummy deluxe! :)) Drank a large cup of peppermint tea to it as well and a green smoothie with banana, kale, grapefruit and almond milk. *FULL*

2. Made some raw cookies in the afternoon for an easter collaboration-project I have with another raw blogger. Recipe and more pictures coming soon!!

Gifts from America

I got a big package delivered this week - all the way from the states! It was from my best MKA-friend Celia. I LOVE surprises! Although this wasn’t really a surprise since me and Celia had been blabbing about sending each other a food package ever since we both left the academy. So after what seemed like years it finally arrived! My package to Celia contained THIS. And what I got from her you can see up here. It was a mix of things, mostly from Trader Joe’s. Celia is WELL aware of my fanatic love for food stores such as Whole Foods and Trader Joe’s. I got some lovely freeze dried bananas that I munched on as I was unwrapping the rest (impatient, me?), green beans snacks, a chocolate/coffee bean grinder for desserts, a white frosting mix and some PEEPS! It was really cute that she sent me the peeps since one of the other students at MKA made raw peeps for her final and I was the only one who couldn’t relate to what PEEPS was. Haha! Now I know. Weird looking chicks. 

The best thing in the whole package though was a lovely mint green cropped tank that Celia had designed herself! The pattern (which you can’t really see on the photo) consisted of small kimchii-jars, kombucha bottles and other suiting things for a person like me. She’s a very talented gal this Celia. I was thinking of maybe coming up with some sort of fun CONTEST here on the blog next week since winning (and giving away!) things is so much fun. Who would be interested in that? Everyone can take part of course. Even if you live outside of Sweden (wink wink at FoodFeud) ;))
